Gluten-free Vegan Apple Crisp

It’s Halloween, I know. But I have to share this wonderful story of why I HAD TO make this gluten-free vegan Apple Crisp on Halloween. John and I love to get together with our amazing friends and have a good laugh, eat yummy food, and chat. Two of the six people in our group are vegans, and two are borderline vegetarians. But you can’t have apple crisp without it during the fall. You can’t. Am I right?

It’s as basic and simple as it gets, but it tastes just as good as any other apple crisp I’ve ever tried. Thanks to Earth Balance (oh, how I adore you!), it’s dairy-free. It’s also gluten-free, thanks to the almond meal, gluten-free oats, and gluten-free blend of flour. Good riddance, food allergies.

What does it taste like? The warm, sweet apples are topped with cinnamon and a crispy, crumbly topping. Add some dairy ice cream or non-dairy to the top and enjoy. Fall has never tasted so good (or been as healthy), I am convinced.

Ingredients

CRISP

  • Eight small-medium apples (peeled/cored/chopped // sweet or tart apples // 8 apples will yield about 6 cups)
  • One dash of lemon juice
  • 1/4 cup sugar
  • 1 Tbsp of cornstarch
  • Half a teaspoon of cinnamon
  • One pinch of salt

TOPPING

  • Light brown sugar, 1/3 cup
  • 1/4 cup gluteSugare flour blend
  • Old fashioned oats, 1/2 cup, gluten-free
  • Almond meal 1/4 cup
  • 1/4 tsp. cinnamon
  • One pinch of salt
  • Non-dairy Butter (melted // like Earth Balance // A little more than half a stick will yield 1/3 cup)

Instructions

  • Preheat oven to 375°F (190°C) and lightly oil a 9×9 baking pan (adjust the number/size of the pan if you are changing batch size).
  • Add the apples to a large plastic bag or bowl and sprinkle lemon juice on top. Sprinkle granulated Sugar, cornstarch, and cinnamSugar top.
  • Transfer the mixture to a baking dish.
  • Add the brown sugar, flour, and almond meal sugar bowl that has been rinsed and dried. Stir in the cinnamon and salt. Mix in melted butter until the mixture resembles wet, sandy sand.
  • Sprinkle topping over apples and bake for 45 to 1 hour until apples are softened and the topping is golden brown.
  • Rest 10-15 minutes before serving. It is great with vanilla or caramel ice cream.
