Sweet Potato Parmesan Gratin

This post is written on a full stomach, which I think is the best kind. It’s 11:45 am, and I just ate leftover pancakes with a Chocolate Breakfast Shake. You may not have a cup of coffee until 11 o’clock if you are working from home. What’s the big issue? I got fed regardless…

This sweet potato gratin made me feel full. This is the breakfast of champions. It’s a mix of sweet potatoes, one little yellow potato, and lots of freshly grated Parmesan.

This dish is so easy to make. Its rustic nature is evident: sweet potatoes that are loosely sliced with a little salt, pepper, and thyme, fresh grated cheese, and milk. You can bake it for about an hour and have a delicious and beautiful dish. It’s great for lunch, but you can also serve it with fruit or eggs at breakfast or as an afternoon snack.

What’s the best part? The meal is served hot, warm, or at room temperature. You’ve probably guessed that this is my favorite meal.

Ingredients

  • Two organic sweet potatoes (sliced into thin rounds).
  • Small red or yellow potatoes
  • Salt and freshly ground pepper 1/4 teaspoon each
  • Fresh or dried thyme, roughly chopped.
  • Parmesan cheese, 3/4-1 cup (finely grated*).
  • I used 2 % milk.

Instructions

  • Preheat the oven to 400 degrees F.
  • Butter or lightly lubricate a baking dish, cast iron skillet, or frying pan.
  • Add the potatoes to a large bowl and sprinkle generously with pepper and salt. Toss the potatoes with the thyme, half the cheese, and the remaining cheese.
  • Pour the milk over the potatoes. The milk should only cover the potatoes.
  • Remove from oven, carefully drain a little liquid (approximately 1/3 cup according to the original recipe). Sprinkle the remaining grated cheese on top and return the dish to the oven.
  • Bake for another 45-50 mins, or until the milk has been absorbed and the potatoes are soft. The top and edges should be golden. Drain off more liquid if you want to avoid a watery result.
  • Rest the fruit at least 20 minutes prior to serving. This will allow juices to be redistributed.
  • You can make this ahead and then reheat it in the oven or microwave.
