French Toast with Bananas, Vegan Ingredient

The banana taste/sweetness must shine through. In this recipe, bananas can be used in place of an egg and a sweetener. Bananas are a fruit that has a lot going for them.

It is easy to mix the batter. Add the ingredients, mash the banana, and wait for your grill to heat up. Dip, soak, and then cook! Watch how crispy and golden the edges become. Seriously, yum.

Make a French toast Party! Who could refuse French toast? What I want to know is: If they do, then you need to find new friends. Rhonda, I’m so sorry. Someone had to say that.


French Toast

  • One banana that is just ripe (1/2 cup)
  • 1 1/4 cups almond milk without sugar
  • Flaxseed Meal, 1/2 Tbsp
  • 1/4 tsp. cinnamon
  • If using sandwich-style bread, soak it for less time. Use sandwich bread and soak for less time.
  • 1/2 tsp vanilla extract (optional)
  • 1 Tbsp Almond meal

For Topping ( optional

  • Maple syrup
  • Peanut Butter


  • In a large shallow dish, mash bananas.
  • Stir in flaxseed and cinnamon. Add more almond milk if your batter is too thick. The batter should be pourable. Vanilla is optional.
  • Allow batter to rest for five minutes while heating your griddle/pan on medium heat.
  • When the surface is hot enough, apply a generous amount of vegan butter or coconut oils (I like Earth Balance’s flavor).
  • Use your fingers to ensure that the bread is fully immersed. Transfer immediately to the skillet. Optionally, you can sprinkle a little almond flour on the sides after they have been dipped to add texture.
  • Cook each side for 3-4 minutes or until golden brown. Use a sturdy spatula to flip the pancakes carefully. The banana mixture is sticky and can stick if not handled gently. If you notice that your French toast is browning or burning too fast, lower the heat on your grill.
  • Serve immediately with toppings of your choice. Peanut butter and maple syrup are all I need.
