Dark Chocolate Hemp Energy Bites

What about a delicious dark chocolate energy bar made from healthy ingredients? Yes, please!

Friends, get your food processors ready. Let’s create the most delightful snack around!

The energy bites can be made in just six ingredients and under 30 minutes.

Dates are my favorite natural sweetener!

  • I love Dates because they are nature’s caramel and contain minerals such as zinc, potassium, and magnesium!
  • Walnuts are next. They contain a lot of protein and omega-3 fatty acids.
  • Cacao Powder is rich in chocolate flavor and contains magnesium, iron, and phytonutrients.
  • Almond Butter contains more protein, manganese, biotin, and vitamin E.
  • Hemp seeds also contain iron, magnesium, and zinc. They’re also a complete protein with 20 amino acids, including nine essential amino acids.

This is a healthy snack, I am sure we all agree.

These bites have a similar texture to truffle.

These are so moist and chocolaty. When you roll them in cocoa powder, they get even more fudgy. This is like a dream scenario.

These bites are the perfect healthy snack or dessert. They are great for an afternoon energy boost with a cup of tea. These would be a delicious topping for overnight Oatmeal or 5-minute blender bowls.

Ingredients

  • Pack one cup of pitted dates (Medjool works best).
  • 2 cups raw walnuts
  • 6 Tbsp cocoa powder or unsweetened cacao powder (plus extra for rolling).
  • 3 Tbsp. Hemp seeds (plus extra for rolling).
  • 1/4 teaspoon sea salt
  • 3 Tbsp creamy Almond Butter (or any other nut or Seed Butter)
  • 1 Tbsp coconut oil ( optional for extra fudgy texture).

Instructions

  • Add dates to the food process, and pulse/mix till small bits remain or a ball is formed. Scoop out the dates and set them aside.
  • Add walnuts into the food processor and pulse until they are a fine meal. Add cacao powder, hemp seeds, and sea salt. Then, pulse a few times more to combine. Don’t overmix, or the walnuts may turn to Butter.
  • Add the dates along with the almond oil and coconut butter (optional). Mix/pulse until combined. The mixture should resemble a moist, doughy mixture. If the mixture is too wet, you can add more cacao powder or hempseeds.
  • Refrigerate for 10 minutes. Scoop out Tablespoon-sized amounts (I prefer the scoop). Carefully form into balls. Use your hands to develop/roll the dough into balls. The dough is fragile, so you will need to be gentle. The total number of energy bites should be around 20 (the amount written in the recipe – adjust for a different default serving size).
  • Roll in additional hemp seeds or cacao (optional). Note: Rolling the bites in cacao powder gives them a sticky, fudgy texture. I like that. Stick to hemp seeds for energy bites that are less sticky!
  • Keep leftovers in an airtight container in the fridge for up to a week or in the freezer for up to a month.
